Healthy Zucchini "Pasta" - One of my favourite foods of the moment!

As the title says, zucchini pasta is one of my favourite foods of at the moment! I never really enjoyed zucchini before I saw someone suggessting usuing zucchini instead of pasta. Now I buy them every time we go shopping! I could never eat them straigt (yuck) but they're really good as a pasta subsitute or as a filler in recipies (for example zucchini lasagne or using it to plump up loaves or oatmeal). I do love me some zucchini! So tonight, I figured I'd have a nice big plate of what I call "zucchini alfredo", even if that name is inaccurate. :) I feel like I should post here again, but I'm not sure what to post, so enjoy this low quality photo-journey of me making dinner. How scintillating.
I started of by sautéing onions in a big of vegan margarine and almond milk.
Then I chopped up two zucchinis. Usually I only use one zucchini, and cut it into fettuccine-like strips, but I was feeling both extra hungry and extra lazy tonight.
I added my usual ingredients: a bit more almond milk, a few spoonfuls of Light Herb and Garlic cream cheese, a few tablespoons of parmesean cheese and some fresh basil, but my dad suggessted that I change up my recipe a bit. So I also added some goat cheese (cheese made with goat's milk > cows milk any day), white wine and cornstarch.
And then stirred it and let it cook for a while. It's a real tragedy that I have a cold and couldn't smell it.
And then it was done, and I enjoyed it with some Limonata and the knowlegde that I took some amature photos of my food. (Oh wait, the one day I make a large meal to accomadate my large appetite, I'm not hungry.)
